where it comes from

muhammara comes from aleppo, one of the oldest continuously cooked-in cities on earth. it's roasted red pepper and walnut brought together by pomegranate molasses — sweet, sharp and deep at once.

against grilled paneer it does what a good sauce should: makes you ask what's in it before you've finished the bite.

method
