the story

where it comes from

another one of ours. we took the idea of our angriest flavour and folded it into bread — three different chili sauces from three different corners of the region, layered so the heat keeps evolving as you eat.

harissa brings warmth, shatta brings sharpness, zhoug brings a green, herbal burn. it's hot, but it's hot with flavour, not just for the sake of it.

shatta is a fermented Levantine chili paste; zhoug is a fresh Yemeni chili-herb sauce — same heat, opposite techniques.

  • ·zhoug (blitz green chili, coriander, garlic, cumin, oil)
  • ·sumac slaw
  • ·warm pita

method

  1. 1char the paneer and toss with harissa.
  2. 2make quick zhoug in a blender; have shatta and sumac slaw ready.
  3. 3layer the pita: harissa paneer, a stripe of shatta, a spoon of zhoug.
  4. 4top with sumac slaw to cut the heat. proceed with caution.

the secret we keep

three chilies doing three jobs — warm (harissa), sharp (shatta), herbal (zhoug). one big chili would just be hot; three make it interesting.
