the story

where it comes from

thai cooking balances four things in every bite — sweet, sour, salty, hot. get one wrong and the dish falls over. get it right and you can't put the fork down.

the street version is loud and fast: a screaming-hot wok, a fistful of herbs thrown in at the end so they bruise but don't cook. we chase that same freshness, cold.

what we changed

  • ·juice of ½ lime
  • ·1 cup broccoli, charred
  • ·½ cup edamame
  • ·handful thai basil

method

  1. 1char the broccoli in a dry hot pan until spotty.
  2. 2toss seared paneer with sweet chili, soy and lime.
  3. 3blanch edamame; tear the basil at the last second.
  4. 4build over rice, scatter peanuts and basil, squeeze more lime.

we make the sweet chili from fresh red chilies and palm sugar, not a bottle — that's what stops it tasting like a sauce packet.
