the story

where it comes from

gochujang isn't a sauce you buy and squeeze. it's a ferment — chili, glutinous rice, soybean — left to age until the heat turns round and the sweetness turns savoury. that patience is the whole flavour.

korea eats this as bibimbap: rice, vegetables, a fried egg, a spoon of gochujang, tossed hard at the table so every grain gets coated. it's a bowl built to be mixed, not admired.

  • ·150g paneer, cubed
  • ·2 tbsp gochujang
  • ·1 tbsp honey
  • ·1 tsp sesame oil
  • ·handful spinach, wilted
  • ·2 tbsp kimchi
  • ·½ cup edamame
  • ·scallions + peanuts to finish

method

  1. 1whisk gochujang, honey and sesame oil into a glaze.
  2. 2sear the paneer hard, then toss in half the glaze off the heat.
  3. 3wilt spinach with a pinch of sesame, blanch the edamame.
  4. 4build over rice: spinach, paneer, kimchi, edamame in sections.
  5. 5drizzle the rest of the glaze, top with scallion and crushed peanut. toss to eat.

the secret we keep

we ferment our own gochujang and kimchi — the depth from that you can't shortcut at home. a good store paste gets you 90% there.
